The Consortium of Brunello conference on traceability of Sangiovese Federica Camin - Edmund Mach Foundation, Institute of San Michele all’Adige, Center for Research and Innovation, Department of Food Quality and Nutrition The traceability of the origin of Brunello di Montalcino wine using the stable isotope method The analysis of the relationship between stable isotopes of bio-elements (hydrogen, carbon, oxygen) has been used for decades to verify the authenticity of wine and its origin stated on labels. The tests are based on comparing the isotopic values of the sample with those of an official database created by the EC Regulation 555/2008. The database provides isotopic referenced data from authentic samples annually, and on this basis defines the legal limits of the isotopic data for grape products from each country, each sub-area and in the case of a significant number of samples, each denomination. It allows defining the ranges of isotopic variability and thus the more specific and typical limits of authenticity of wines. This allows us to define the product and then improve it, objectively demonstrating the link with its territory of origin. -

Genetic analysis has proved very effective also for the identification of vines and some laboratories today are able to establish, with precision, the varietal correspondence of materials removed in any stage of development and from any organ of the vine. Since wine is the result of the transformation of grapes, it is natural to consider that DNA testing is also suitable to establish the varietal origin of wine products. Many experiments have shown, however, that the quality and quantity of the DNA found in the grapes strongly limits the possibilities of analysis. It is not sufficient to prove the presence of traces of DNA attributable to Sangiovese, but the exclusive origin of the wine on the specific variety must be proved using sensitive and reproducible methods. -
